Why Corn-Syrup Free?Many would say there is no difference between cane sugar and corn syrup. We disagree! While any balanced diet should limit sweets, corn syrup is higher in fructose (than glucose). Most body cells can utilize glucose, but fructose is more difficult. Fructose can only be broken down in the liver, linking it to fatty liver syndrome. Fructose consumption is also connected to poor gut health, obesity, heart disease, diabetes, kidney stones, etc. (It’s use can be helpful to extreme athletes who need a quick recovery from strenuous excercise.) At the end of the day, we avoid corn syrup in our restaurant because we believe in whole foods as close to nature as possible! While derived from corn, it is scientifically modified and its origin story was a lab in 1957. It was created to be a cheaper alternative to sugar, in response to a sugar tax.
